2021-10-4 · Using a water cooled Tormek, it is easy to forget how often we burned tool edges with a dry grinder. Good practice was to stop short of fully grinding the edge and finish off with bench stones. The hollow from the dry grinder reduced the amount of hand grinding needed. This is not needed with a Tormek. The electric motor provides all the power.

Ernie just added three degrees to his bevel angle to compensate for the Tormek's hollow grind. Considering that A2 chisels are routinely ground to at least thirty degrees, this seems a practical solution.

If I’m in a hurry, I would do it, but not if I have the time to work properly. As far as I’m concerned the slight hollow grind that the wheel would do is not acceptable.

The wheel is tapered, providing a large grinding area. I have always felt that the great hollow grind vs flat grind debate was much ado about nothing with the tiny bevel with knives with the large Tormek wheels.

The final hollow is slightly deeper (8" radius vs 10" radius), and the upside of this is that a honing will last slightly longer. It is very important that the edge is smooth and the hollow grind is straight.

Because there is less material directly behind the edge, this type of edge is less durable (although the degree to this is more theoretical than in actual practice).

Machines that sharpen on the flat side of the stone or grinding wheel (e.g. Shinko or Tormek with diamond wheel) are therefore better suited for knife sharpening.

One key to getting a great edge from the Tormek is getting a good dress on the wheel. I use the diamond dresser from Tormek and then take an old Lansky fine diamond hone and smooth the wheel some more.
